In the early summer months, these tiny insects populate the tea fields in the Hsin Chu region of central Taiwan. The leafhoppers bite the leaves of the tea plants and cause a chain reaction. Oxidation occurs and in response, the plants store nutrients that build flavor and adds sweetness to the brewed cup.
