Yin Zhen Silver Needles
This white tea comes from the town of Fuding in Fujian Province. Yin Zhen is Mandarin for Silver Needle. It is handpicked in late April/early May and consists of long slender downy leaf buds that have yet to open for spring.
The buds are steamed after picking rather than dried with heat. The result is a pale yellow liquor with a very subtle yet complex flavor that is both floral and nutty.
White tea is being studied to see if it contains higher antioxidant levels and less caffeine than other teas varieties.
Optimum Brew: A heaping teaspoon per cup for 3 infusions.
Brewing Technique: This tea is so forgiving that it will brew a wonder cup of tea regardless of the water is too hot. Ideally, the trick is to use temperature around 170 degree F to get 3 flavorful brews.
